

Each bottle of wine that is created at Ellman Family Vineyards has our personal seal of approval. Everything from the grapes that we select to the winemaking techniques we employ to the barrels we utilize has been carefully chosen by us. We know every step is integral to creating the perfect bottle.

When we decided to get into the wine business, we knew we needed to get our grapes from the finest wine climate on the planet: Napa. Our proximity to the region has an added benefit — it allows us to personally select our favorite varietals for our wines.
Our Pinot noir grapes come from the Sonoma Coast. The cool ocean climate allows for grape flavor and sugar development to simultaneously reach the perfect point, resulting in a well-balanced fruit.
The grapes for our Bordeaux blends come from some of the greatest vineyards in Napa Valley. We look for growing conditions conducive to developing the rich, nuanced flavors worthy of our flagship blend.

As soon as our fruit arrives from the vineyard, it is treated as gingerly as possible to preserve the natural grape flavors. After a few days cold soak to extract color and tannins, the grapes are fermented in small batches to allow us to choose the best lots for our flagship blend. All of our wine is aged in French oak. The Pinot noir is aged 10 months in 33% new French oak, while our Proprietary blend is aged 22 months in 66% new French oak. Each year, we select the barrels from forests and coopers that we feel will best complement the flavors of our wine. Our wines remain unfined and unfiltered to maintain their integrity. That way, we know that the wine we put into the bottle is just as we expect it to be.
